
Baked Lemon Herb Chicken with Vegetables
Ingredients:
- 4 boneless, skinless chicken breasts
- 2 cups mixed vegetables (such as bell peppers, zucchini, carrots, and broccoli)
- 1/4 cup olive oil
- Juice of 2 lemons
- 1 tbsp garlic (minced)
- 1 tsp dried oregano
- 1 tsp dried rosemary
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
- Preheat the Oven : Preheat your oven to 400°F (200°C).
- Prepare Marinade : In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, paprika, salt, and pepper.
- Marinate Chicken : Place the chicken breasts in a large bowl or a zip-lock bag and pour the marinade over them. Let it marinate for at least 30 minutes (or up to overnight in the refrigerator for more flavor).
- Prepare Vegetables : While the chicken is marinating, wash and chop the mixed vegetables into bite-sized pieces.
- Combine : On a baking sheet lined with parchment paper, arrange the marinated chicken breasts in the center and surround them with the mixed vegetables. Drizzle any remaining marinade over the vegetables.
- Bake : Bake for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C). The vegetables should be tender and slightly caramelized.
- Serve : Garnish with fresh parsley before serving. This dish can be enjoyed on its own or served with a side of brown rice or whole grain couscous for a complete meal.
